pumpkin bread

Pumpkin Bread Pareve

Yield: 36 servings (2X chai!)

3 cups canned Libby's pumpkin
1 1/2 cups vegetable oil
4 cups white sugar
6 eggs

4 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons each of ground cinnamon, ground nutmeg, and ground cloves

1. Preheat the oven to 350 degrees F. Spray three 9"x5" loaf pans with Pam for baking, or use muffin cups.

2. In a large bowl, beat together the pumpkin, oil, sugar, and eggs. Add in the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Stir it all together until well blended. Divide the batter evenly between the prepared pans.

3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed. In the meantime, call in your order for a ready-made kosher Thanksgiving dinner. Lots of stores are offering it!

4. When it's cooled, wrap up in a cellophane bag, decorate with cut-outs of Pilgrims and bring it to Thanksgiving dinner.
